Our Sunday School class had a Superbowl party tonight. Actually it was a "soup"er bowl party. Everyone brought soup. We had tin can soup, homemade chicken noodle soup, and taco soup. It was a great chance for our kids to play together and for us to get some of what I call "big people time". I really needed a chance to share with "big people". Sarah, Rebekah, Ann and I played Mexican Train. They had never played before and "immensely" loved it! I made my "famous" taco soup. Here's the recipe.
Brown some ground beef. Add some taco seasoning and about a cup of water. In crock pot, add one can of corn, one can of pinto beans, one can rotel, a couple of cans of water, and then add the taco meat mixture. Heat and about an hour before serving, add 2 lbs of Velveeta. I like to smash some chips in the bottom of my bowl and pour on the soup. Then I add some shredded cheese to the top.
Everyone loves this soup when I take it somewhere and it is "soup"er easy to make. Shari, remember the popcorn bucket? Thanks so much for letting me have it and I wish you were here to help me eat all the leftover taco soup inside!
Oh, yeah, we didn't watch the super bowl! Who won???
