Valentine's Day 2010

This is always a holiday I would rather skip, but because of the lovely potato I found, I tried to make it festive for Ciara and I.  We decided to make twice baked potatoes out of the heart shaped potato I found.  I made them for my nephews once when they came and now they beg me to make them every time.  They eat several each!!  I am glad I can do something to make them happy.  So I will make them every time they visit if they want.

I had picked up some (Yellow Tag) steaks a few weeks ago, so we had broiled steak and twice baked potatoes.   Yellow Tag means it was on clearance.  I don't mind clearance meat as long as there are no brown spots on it.  Here is my recipe for the potatoes, although I know there are many different ways to make them.

Bake the potatoes.  (I never bake in the oven, but since it was cold, I decided to.)  Slice in half and use a spoon to take out most of the insides.  I leave about a 1/4 inch of potato inside.  Put all the potato you have scooped out into a big bowl.  Mash it up with a potato masher.  Add butter, sour cream, bacon bits, cheese,  and chives or whatever you like.  Mix it all up.  Spoon it back into the potatoes.  Put back in oven for a few minutes to melt the cheese.  I warn you that kids will eat more than you expect!!  Ciara ate 5 halves, so that is 2 1/2 potatoes!
